When Bill bought Daphne’s out of bankruptcy in 2010, his vision revolved around completely overhauling the restaurant chain’s menu, look and mission. One year later, Daphne’s is an authentic alternative for today’s healthier, more active consumers who want genuinely healthier dining options created with fresh, high-quality ingredients rooted in California-inspired, Mediterranean fare. Today, he’s proud of all his team has accomplished with the rebrand including a hyper-local, grassroots community initiative that supports education, youth sports and arts in schools, and the company’s new music discovery program that helps emerging musicians find a larger audience. Bill arrived at Daphne’s after years on the finance side of the restaurant business as a founder of commercial finance and investment banking company, American Commercial Capital (sold to Wells Fargo), and more recently, Trefethen Advisors. Bill also served as managing director with Koll Investment Management, a director in the Financial Advisory Services Practice of PriceWaterhouseCoopers, and a member of the financial advisory services at Arthur Anderson. He received a BS in Accounting and Finance from Arizona State University.
DOWNTIME:
Bill maintains a healthy lifestyle through active participation in a variety of sports including surfing, mountain biking, tennis, snowboarding, and skiing, and by keeping up with his teenage kids at home, on the slopes, or at the beach.

Shannon’s aptitude for numbers has shaped a highly regarded career in finance that includes senior positions at large banking institutions and real estate companies, including Scala Real Estate Partners, Greencrossing Real Estate Companies, Lennar Corporation, Wells Fargo Commercial Capital, and Bank of America. He was also CFO at one of the largest restaurant franchise companies in the country with 67 Carl’s Jr. locations and 14 Papa John’s locations. At Daphne’s, he is responsible for monitoring, forecasting and structuring the company’s finances and is managing the franchising effort for the brand. Shannon holds a MBA from Asuza Pacific University, and a BS from the University of Southern California.
DOWNTIME:
As a dedicated Ironman athlete, Shannon leads a rigorous training schedule of swimming, biking, and running his way through three to five competitions each year. He’s also an avid snowboarder and mountain biker and can be found on weekends coaching his kids’ youth sports teams throughout Southern California.

With an enviable career in the restaurant industry spanning more than 20 years, Craig now leads Daphne’s brand execution implementing brand initiatives at the restaurant level and focusing on recruiting and training, store remodels, local store marketing programs, and supporting new franchisees. Perhaps starting with a love of food cultivated in culinary hotspot New Orleans, Craig has held senior leadership positions at successful restaurant companies including Houston’s, Starr Restaurant Organization, Fox Restaurant Concepts, and JNK Concepts. And with a passion for all things wine, he also is a Certified Level 1 Sommelier.
DOWNTIME:
With Hawaii being his favorite vacation spot, it’s a good thing Craig enjoys the outdoors. In his downtime, Craig surfs, hits the trails on his mountain bike, and hits the oceans in a kayak.

Behind every successful restaurant company is an accounting expert like Ricardo who keeps track of the bottom line. Ricardo joined Daphne’s in 2007 with more than 20 years of experience, and as vice president of treasury and cash management he manages accounting requirements for Daphne’s and its franchise efforts. Before Daphne’s, Ricardo was Corporate Controller for F Street Corporation overseeing various finance, accounting and information services activities. Ricardo earned a Bachelors of Science in Accounting from the Technologico de Monterrey in Monterrey, Mexico.
DOWNTIME:
Being married with three children keeps Ricardo moving, as does his fitness routine, which at the time, incorporates a passion for kettlebells.
NICOLE JONES, VICE PRESIDENT OF FOOD & BEVERAGE, SUPPLY CHAIN

BIO:
As vice president of food & beverage, supply chain, she is the wizard behind the culinary curtain at Daphne’s, helping to cultivate the revamped menu and creating new guest favorites such as the flatbread pizzas, pita burgers, Street Pitas, premium salads, among other flavorful menu items. She also is responsible for purchasing and food safety, and assists with training and operations. Before Daphne’s, Nicole honed her product development skills at a nutrition bar manufacturer and focused on product development and quality assurance at Rubio’s, a regional Mexican fast casual chain. Nicole holds a BS, Food Science, from Michigan State University.
DOWNTIME:
Nicole likes to take her work home, spending time cooking and baking and also enjoys a good book when she can venture away from the kitchen at home or at Daphne’s.
CARRIE GLADDEN, DEVELOPMENT CONSULTANT

Carrie leverages her expertise in real estate, property management, leasing and development to support Daphne’s transformation into a healthful and flavorful dining alternative and its growth into new markets across the U.S. Prior to Daphne’s, Carrie held increasingly senior positions at restaurant and retail development companies in Austin, Texas and Southern California, including Kitchell Development. Carrie holds a BS, Business Economics, from the University of Texas at Austin and is studying law in pursuit of her JD.
DOWNTIME:
When not managing Daphne’s real estate portfolio, Carrie can be found at the pool or beach where she swims the open water for fitness, or where she plays at the surf with her daughter.
